Elections & Biscotti


Yesterday and today were quite interesting. Filled with biscotti and elections,naturally.

I will start this entry by tipping my hat to our new President,Barack Obama. Although I was voting for McCain,I am actually excited Obama won. To see someone like him in my lifetime voted in office makes it that way,I guess. To tell you the truth,I am glad the election is over with. I am tired of those disturbing commercials and newspaper ads. Not to mention the phone calls!


Today,to past time,I made delicious gingerbread biscotti. Now,for those who don't know what biscotti is,it is a crisp Italian cookie. I buy them everytime I visit my local coffee shop,and dipping them in your traditional hot cocoa or premium roast coffee is amazing. So go out and try one! Here is the recipe:


Gingerbread Biscotti

1/2 cup butter,softened

1/2 cup sugar

1/2 firmly packed brown sugar

1 tablespoon ground ginger

3/4 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon ground cloves

2 eggs

3 tablespoons molasses

2-1/2 cups all purpose flour

2 teaspoons baking powder

Heat oven to 350. Combine butter,sugar,brown sugar,ginger,cinnamon,nutmeg and cloves in a large bowl. Beat at medium speed,scraping bowl often,until well mixed. Add eggs;continue beating until well mixed. Add molasses; continue beating until well mixed. Reduce speed to low; add flour and baking powder. Beat until well mixed.

Divide dough in half. Shape each half into 14-inch long log with floured hands. Place logs 5 inches apart onto ungreased cookie sheet. Flatten each log to 2-inch width. Bake for 25 minutes or until set. Cool on cookie sheet 15 minutes.Reduce oven temperature to 300°F. Cut logs diagonally into 1/2-inch slices with serrated knife. Place onto cookie sheet, cut-side down. Bake for 10 minutes. Turn slices; continue baking for 12 to 15 minutes or until dry and crisp. Cool completely.

Place candy coating into small microwave-safe bowl. Microwave for 1 minute,and stir until well melted and smooth. Stir in cinnamon.

Place cookies onto wax paper; drizzle candy coating. Let set room temprature until coating is firm.

My election day sucked but that is ok. And Janae gave me some of the biscotti and it is delicous!I love you all!
